Ingredients
- Basmati rice
- 2 vegan chicken fillets
- 600ml vegetable stock
- 2 tbsp plain flour
- 2 carrots
- 1 onion
- 1 tbsp soy sauce
- 1 tbsp curry powder
- Cucumber
Method
- Fry the onion and carrots with the curry powder until softened
- Add the flour and distribute until the vegetables are evenly covered, add the soy sauce
- Add vegetable stock and simmer for 10 minutes
- Blend until smooth and thick
- Place vegan chicken fillets in the air-fryer for 15-20 minutes at 200°
- Boil rice until cooked
